Dates stuffed with nuts and nut butter, rolled in dark chocolate and finished with a sprinkle of crushed nuts and desiccated coconut. You can totally use nuts of choice I have used almonds, walnuts and peanut butter in this recipe.
Dark chocolate chips along with a drizzle of olive oil are heated in a microwave until chocolate is smooth and velvety. Stuffed dates are then rolled into melted chocolate and are to be freezed for 10 minutes.
Mejdool pitted dates can be found at any grocery store, pitted dates are highly recommended for ease and convenience. Slightly pull the edge where you see the slit and gently stuff nuts and nut butter.
While the melted chocolate is still fresh on stuffed dates immediately sprinkle coconut/nuts so that it sticks properly. Isn't that a delicious and simple treat to make?
