Simple, easy and delicious make ahead desserts are my jam. I love creating and experimenting with different flavours to create yummy yet easy treats to share with friends and family.


This recipe came about by a recipe fail and I was left in a pan of brownie pieces. Instead of them going to waste, I saw a few mini dessert bowls and figured I could not go wrong with some sort of tasty trifle. Voila! This decadent, creamy and rich chocolate peanut butter brownie trifle was born!


All you need is a few simple ingredients you most likely have on hand plus a boxed brownie mix to whip up these cutie little treats in no time! There is some set up time required in the fridge so these make for the perfect make ahead dessert. I hope you enjoy this recipe!

Ingredients

  • 1 box brownies, prepared
  • 1 block cream cheese, softened to room temperature
  • 1/2 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup smooth peanut butter
  • 4 cups whipped cream, divided
Instructions

Prepare boxed brownies according to instructions on the package using the ingredients required. Bake accordingly and allow to fully cool in the pan, at least 1 hour.
While the brownies are cooling, use an electric mixer to beat cream cheese until smooth.
Add in sugar, vanilla and peanut butter and beat again until just combined.
Using a spatula, fold in 1 1/2 cups of whipped cream until combined. Then place the mixture in a piping bag and allow to keep cool in the fridge until you are ready to assemble.
Once the brownies have completely cooled, slice into at least 18 cubes and set aside.
To assemble
Using mini parfait cups, ramekins or dessert cups, layer in a slice of brownie on the bottom of the dish.
Next add in a layer of the peanut butter cheesecake layer making sure the entire brownie underneath has been covered. This works out to be about 1/4 - 1/2 cup of the cheesecake mixture.
Add another brownie piece on top of the cheesecake layer.
Use the remaining whipped cream to top off each mini trifle.
Allow to set up in the fridge for about 4 hours (overnight is best) before enjoying. YUM.
Tips
  • To make into a large trifle, double all of the ingredients listed about and assemble in a large trifle bowl.
  • Adding in sliced bananas or strawberries on top of the cheesecake layer is BOMB.
