It's appropriate to have cake for breakfast sometimes, right?


If you're looking for something fun to make that's light and fresh, take a look at this berry trifle. Orange cake layered with vanilla custard, fresh fruit and whipped topping-- It doesn't get any better than this!


I made this for the Fourth of July with my family and it was a hit. But, considering it was only a couple of us, we were treating ourselves alllll week with this dessert.


A trifle, although it looks fancy, is so easy to make and perfect for any potluck or gathering. The best part is, you don't have to worry about slicing up a cake or making sure the layers come out perfectly, because it's going to all be covered with whipped topping and fruit at the end!

Ingredients
For the orange cake
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup orange juice or milk
  • 3 eggs
  • Splash of vanilla extract
  • Zest from 1 orange
  • 1 tbs baking powder
  • 2 cups of all purpose flour
  • Sprinkle of nutmeg and cinnamon (optional, but so worth it)
For the custard
  • 1-3.5 oz. package of instant vanilla pudding mix
  • 1-8 oz. container of whipped topping
Other ingredients
  • 16 oz. of your fresh fruit of choice, washed and sliced
Instructions
For the cake
Heat the oven to 350 degrees Fahrenheit
In a large bowl, combine vegetable oil, eggs, sugar, orange juice and vanilla extract.
Once wet ingredients are combined, add in flour, baking powder, orange zest, nutmeg and cinnamon and fold until well-combined.
Pour batter into a 9x13 inch pan and bake for about 25 minutes or until done.
Let cake cool completely and prepare into thin slices for trifle assembly.
For the custard
Follow the package instructions for making the instant pudding. Place in the fridge until set.
Once set, fold half of the whipped topping into the pudding mix and chill in the fridge until you're ready to assemble your trifle.
Assembling the trifle
In a large bowl or trifle dish, layer slices of your cake, custard and fresh fruit until you reach the top of the bowl.
Top with whipped toping and more fresh fruit.
Cover and place in the fridge until you're ready to enjoy!
