This Italian panini sandwich on ciabatta bread is one of my quick go to lunches! It only takes around five minutes and always turns out so delicious. I typically make it with ham, pepperoni, provolone, mixed greens , pesto, and mayonnaise because that is what I usually have on hand for ingredients. This sandwich is also delicious with roasted red peppers, sun dried tomatoes, sliced tomatoes, and/or salami. Sourdough instead of ciabatta would also be really good. I use my panini press to heat this, but you could use a toaster oven, regular oven, or just eat it cold. Can’t go wrong either way!

Ingredients

  • 1 ciabatta roll
  • 3-4 slices of ham
  • 4-6 slices of pepperoni
  • 1 slice provolone or cheese of choice
  • Handful of mixed greens
  • 1 Tbsp pesto
  • 1 Tbsp mayonnaise
Instructions

Preheat panini press.
Cut the ciabatta in half and spread the pesto and mayo over one side.
Add ham, pepperoni, cheese, and mixed greens and replace the top bun.
Heat in panini press for about 3 minutes or until heated through and ciabatta is golden brown.
