Indian Style Spiced Fish With a Tomato and Coriander Relish

We could all use a little more fish incorporated into our diets due to the wonderful health benefits it brings, but I often struggle to think if new ways to prepare it. This recipe is a unique method of adding flavour to a simple sea bass fillet.


Aromatic spices are combined with flour to create a delicate coating that doesn't overpower the fish. The relish then provides a fantastically fresh and tangy side that really livens up the whole dish and is super healthy too.


What's more is this whole meal can be prepared in less than 30 minutes, making it a great option for a midweek meal!

Beautifully crusted, delicate fish fillets with a tangy and fresh relish. Works great served with new potatoes or just a simple side salad.

Fresh sea bass fillets are then dredged in the flour to create a delicate crust.

Then the fish fillets are quickly fried until cooked.

Ingredients
For the fish
  • 1 tbsp ground coriander
  • 2 tsps crushed fennel seeds
  • 2 tsps ground turmeric
  • 1 tsp chilli powder
  • 1 tsp salt
  • 2 tbsps plain flour
  • 2 large sea bass fillets, skin removed
  • 2 cloves garlic, crushed
  • 2 tbsps olive oil
For the relish
  • Large handful fresh coriander
  • 200g tinned chopped tomatoes
  • 1 clove garlic, crushed
  • 1 tsp ground coriander
  • 1 tsp sugar
  • Pinch of salt
  • Juice of 1 lime
Instructions

Mix the spices, salt and flour into a bowl, then dredge the fish fillets in the mixture until evenly coated, shaking off any excess.
Heat a frying pan until smoking and add the oil.
When the oil is hot, add the fish fillets and cook for 3 minutes.
Turn the fish over and cook on the other side for 1 minute.
Remove from the pan and drain on kitchen paper.
Combine all of the ingredients for the relish in a blender and blitz until smooth.
Serve the fish immediately with the relish.
