Tomato Herb Pizza With Hot Honey

I've been making homemade pizza in a sheet pan for a few years now. Plain old cheese pizza. But this, my friends, is π’‘π’Šπ’›π’›π’‚. Yes, it requires a few more steps than a simple cheese pizza, but each step brings you closer to, as my husband put it, "the best pizza you've ever made." And I can't help but agree with him on this one. It's herby, it's sweet, it's spicy, it's cheesy, and it's just a whole lot of delish. Basically, it skyrockets my former cheese pizza to a new stratosphere. I originally found the recipe on Half Baked Harvest but I made a few adjustments.

  • 1/2 lb pizza dough (homemade or store bought)
  • 3 cups cherry tomatoes
  • 4 cloves garlic ( 2 whole smashed, 2 grated)
  • 2 tsp hot honey
  • 1⁄4 cup extra virgin olive oil, plus more for drizzling
  • 2 TBSP fresh thyme leaves (or 2 tsp dried)
  • 1 pinch crushed red pepper flakes
  • 1 pinch kosher salt and black pepper
  • 1⁄4 cup fresh basil chopped, plus more for serving (or 1 TBSP dried)
  • 1⁄4 cup fresh oregano chopped (or 1 TBSP dried)
  • 1 cup shredded mozzarella
  • 1 cup shredded fontina cheese, or 3-cheese blend
  • 1⁄2 cup grated parmesan
  • 3 oz sliced pepperoni
For the dough
Preheat the oven to 500 degrees F. at least 30 minutes before baking, preferably 1-2 hours ahead, with rack in the upper 1/3 position.
Place pizza dough on a lightly oiled sheet pan. Lightly drizzle olive oil on top of the dough ball. Cover with plastic wrap and let rest for at least 30 minutes, preferably 2-5 hours, if time allows.
For the sauce
Combine the tomatoes, olive oil, 2 cloves smashed garlic, honey, thyme, and a pinch each of salt and pepper in a roasting pan. Roast at 500 degrees F. for 10-15 minutes, until the tomatoes burst. Let cool for 5 minutes, then use a fork to smash the tomatoes down until a chunky sauce forms.
For the herb seasoning
In a small bowl, combine the basil, oregano, 1-2 cloves grated garlic, and a pinch each of red pepper flakes, salt, and pepper.
Remove the plastic wrap. Gently press the dough until it covers the entire sheet pan. Drizzle the dough lightly with olive oil. You might need to sprinkle some flour on top of the dough if it's getting to "stretchy."
Spread on the sauce (you may not need it all). Top with all cheeses, then pepperoni.
Sprinkle the herb seasoning over top.
Bake for 10 minutes, rotate the pizza, and bake another 3-5 minutes or until the crust is golden and the cheese has melted. Top the pizza with fresh basil and more crushed red pepper flakes.
  • Be careful when bursting those tomatoes - they can spit at you! That's why it's best if you let them cool for five minutes.
