Smashed Avocado and Egg on English Muffins

One of my go to lunch options is smashed avocado on toast. I love it topped with a fresh slice of tomato or a fried egg. This time I thought I would switch it up and try something a little different. Let me just say, I think this combination turned out to be a winner and my new favorite way to serve avocado toast.

By using a toasted English muffin as a base instead of toast, it gave a nice chewy texture without sacrificing on the crunch. The everything bagel seasoning and green onions added lovely savory flavors with a touch of freshness.

The best part is that this dish uses hard boiled eggs, so it’s the perfect healthy lunch you can assemble quickly and with minimal mess. I love to hard boil a dozen eggs at a time and have them ready for the week…. Although I’m not sure they will last that long now, I’m already planning on making this for lunch again today!


Begin by slicing an English muffin in half and toasting it on both sides.

While the English muffin is toasting cut open an avocado and scoop out the insides into a bowl (discard the seed). Sprinkle with a little sea salt and using a fork smash it until desired consistency. Remove the English muffins from the toaster and top with the avocado.

Top with sliced hard boiled eggs.

Sprinkle with “everything but the bagel” seasoning and sliced green onions.

These little English muffins are so delicious and make the perfect lunch option!

Ingredients

  • 2 hard boiled eggs
  • 2 English muffins
  • 1 avocado
  • 1 chopped green onion
  • salt to taste
  • everything bagel seasoning to taste
Instructions

Cut English muffins in half and toast
Cut open the avocado, discard the pit and scoop out the insides into a bowl.
Sprinkle the avocado with salt and smash to desired consistency using a fork.
Remove English muffins from toaster and top with the smashed avocado.
Top with sliced hard boiled egg.
Garnish with Everything bagel seasoning and sliced green onions.
Tips
  • If you don’t have it can’t find “everything but the bagel” seasoning you can substitute with salt or make your own.
