Ingredients

  • 1 small red onion, peeled and diced
  • 4 rashers back bacon, diced
  • 1 large tomato, sliced
  • 2 large handfuls baby lead spinach
  • 6 large eggs
  • 100g fat free cottage cheese
  • Salt and pepper
  • 1 tsp dried mixed herbs
  • Spray oil, such as frylight
Instructions

Preheat your oven to 180 degrees celsius.
In a large mixing bowl, whisk the eggs and season with salt and pepper.
Stir in the cottage cheese, spinach and bacon.
Spray a shallow casserole dish lightly with oil, then tip the egg mixture into the dish.
Layer the top with the tomato slices, then bake in the centre of your preheated oven for 35 minutes or until the egg is set and golden.
Leave to cool before slicing.
