My kale and sage gnocchi dish may sound complicated but it is truly an easy recipe. What I love most about it is that I takes on new flavors that aren’t as common in the gnocchi world, turning any meal into a delightful adventure of the palette. The other benefit of this dish is that most of the time it takes to cook doesn’t involve active involvement from you, meaning that you can easily make a nice side salad, wash the dishes and clean up the kitchen while you wait for the gnocchi to boil, achieving all that and putting a lovely dinner on the table in no time at all!

Ingredients

  • 1 kg gnocchi
  • 1 tsp of salt 25 grams of butter (salted or unsalted to your preference)
  • 10 fresh sage leaves (approximately)
  • 7 leaves of fresh kale, thinly sliced horizontally
Instructions

Fill a medium pot halfway with water and turn it on to a high heat. Add in salt. Wait for the water to boil.
Once the water is boiling, turn the heat down to a medium flame, add in the gnocchi and place the lid on the pot. Wait for the gnocchi to boil, this should take around 15 minutes - the gnocchi should float to the surface of the water when ready. You can taste a gnocchi when you think it is ready to check.
Strain the gnocchi into a colander to remove the water and transfer the gnocchi to a large saucepan.
While the gnocchi is still hot, heat the pan over a medium flame. Add in the butter and stir it in until fully melted using a wooden spoon.
Add in sage leaves and mix through.
Next, add in 7 leaves of kale (remove the stalks if they are too tough).
Keep mixing until the kale has wilted, this should take around 5 minutes.
Remove from heat and transfer to serving dish.
Tips
  • Replace butter with margarine for a vegan alternative to this dish.
