Cinnamon Roll Cookies are thick and chewy with a cinnamon-sugar coating and a classic cinnamon roll powder sugar icing. All the flavors of a cinnamon rolls, but in the form of a delicious cookies!

Made from scratch, this recipe will be your favorite cookie recipe for Christmas time baking. They are quick and easy to make and have the great flavor of cinnamon rolls, including a homemade powdered sugar glaze.

WHAT MAKES COOKIES SO CHEWY?

Have you wondered what cream of tartar does for a cookie recipe?

It makes them chewy! Cream of tartar prevents the sugar in cookie dough from crystalizing keeping the dough soft and chewy.


TIPS FOR BAKING CINNAMON ROLL COOKIES

  • Cool cookies before icing. It’s hard to wait, but if you add the icing too early it will melt into the cookie instead of sitting on top as a pretty drizzle.
  • The butter should be softened. Leave butter on the counter to soften. You can cut the butter into small squares and spread out on a plate to make softening quicker.
  • Bake until they are just brown and light in color. This will keep them good and chewy!

Ingredients
For the Cookies
  • 1 c Butter
  • 1/2 c Brown Sugar
  • 1/2 c Granulated Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 1/4 tsp Salt
  • 2 c Flour
  • 1 tsp Baking Soda
  • 1 tsp Cream of Tartar
For the Sugar Mixture
  • 1/2 c Granulated Sugar
  • 2 Tbsp Cinnamon
For the Icing
  • 1 c Powdered Sugar
  • 1 tsp Vanilla
  • 1 - 2 Tbsp Milk
Instructions
For the Cookies
In a large bowl or the bowl of a stand mixer add butter and sugar. Beat until light and fluffy.
Next, beat in egg and vanilla.
Mix in dry ingredients.
Preheat the oven to 350 F. Shape the dough into 1" balls and roll through cinnamon sugar mixture. Place on baking sheets lined with parchment.
Bake for 9*12 minutes. The lighter in color the chewier the cookie.
While cookies cool, make the icing.
For the Icing
Mix powdered sugar, vanilla and milk. Add milk until you get the desired consistency.
Drizzle icing over cookies.
Tips
  • These cookies can be frozen. I recommend icing after they have thawed and before serving.
