White Chocolate Lemon Shortbread Cookies

These cookies are my favorite dessert recipe of 2021 so far! The shortbread melts in your mouth with a little bit of tang from the lemon, and then it’s dipped in white chocolate for the perfect amount of sweetness. They’re hard to put down!
In honor of Valentines I used my heart cookie cutter, but you can choose any shape or switch it up with different colors or decorations- get creative with it!

White Chocolate Lemon Shortbread Cookies
Recipe details
Ingredients
- Zest of one Lemon
- 1/2 cup sugar
- 1 Tbsp Lemon Juice
- 1/2 cup Butter (softened to room temperature)
- 1 1/4 cup All-purpose Flour
- 1/2 tsp salt
- 2 cups White Chocolate Chips
- Sprinkles (optional)
Instructions
- Preheat your oven to 325°. In a food processor or high-powered blender, add the zest of one lemon and 1/2 cup of sugar. Process for about 2 minutes to help the lemon zest to release their oils into the sugar.
- Then add the 1/2 cup of softened butter and 1 Tbsp of Lemon Juice to the food processor and mix until fluffy- at least 3-4 minutes.
- Add in the 1 1/4 cup of flour and 1/2 tsp Salt and process until it comes together. If it's crumbly, don't worry- just put it out on a lightly floured countertop and knead it until it comes together in one cohesive ball.
- Roll it out until it's about 1/4 inch thick- you'll probably have to use more flour for dusting as you do this. Cut out your desired cookie size and shape, and place onto a lightly greased sheet pan.
- Bake for 9-11 minutes, then let them cool for about 15 minutes before moving them onto a rack. Once completely cooled, melt 2 cups of white chocolate Chips, and dip the entire cookie in - scraping off any excess white chocolate.
- If desired, decorate with a drizzle of the excess white chocolate and/or sprinkles. Let the chocolate dry completely before eating. Enjoy!
