With the holiday season now gone, I find that January is a great time to come back and reflect on your favorite recipes from December! I love doing this because I'm able to recreate and upgrade my favorite recipes and essentially create traditions to make them each year. One of these recipes for me is the simple yet delicious shortbread cookies which are not only easy to make but can be enhanced with frosting/icing as you prefer. These are great for holiday parties and are not too sweet, so they can be easily eaten in multiples at functions! I hope you enjoy these cookies as much as I did. Happy New Year!

Ingredients

  • 1 cup soft butter
  • 1/2 cup icing sugar
  • 2 cups flour
Instructions

Preheat over to 330F.
Mix butter and icing sugar in a bowl with a whisk.
Once combined, add flour in sections and leave 1/4 cup of the flour for cookie cutters and sprinkle on top of the dough.
If the dough is too soft, add flour as required. Alternatively, refrigerate the dough for 1 hour.
Roll dough out and cut into desired shapes.
*Optional, as seen in my photo, you can carve out additional designs, letters, and shapes onto the cookies at this stage as well with a toothpick!*
Place cookies on the baking sheet and bake for a total of 12-14 minutes or until bottoms are golden brown.
Tips
  • I recommend keeping the dough in the fridge for a longer period if you're finding that your dough is difficult to work with.
