Linzer Cookies are very simple to make and are a great treat for the winter time. They’re are delicate, crumbly cookies and are traditionally filled with raspberry jam, but since I had some Winter Jam from last week’s video I decided to put the two together to see if it would work and it totally did! The winter flavors definitely complements the cookies.

Linzer Cookies are not only cute with the flower looking shape, they are also delicious. The walnut flour adds an amazing nutty taste to it, the little bit of cinnamon adds a winter touch to it and when filled with the Winter Jam, it really makes it special and to finish it off a little dust of icing sugar for that delicate sweet taste.

These cookies are crumbly and kinda melt in your mouth, they’re definitely not crunchy and are more on the soft and chewy side. Linzer Cookies are basically a sweet sandwich made with delicious crumbly cookies and filled with a fruity centre.

Ingredients

  • ¾ cup Walnut Flour
  • ¾ cup Flour
  • ½ tsp Cinnamon
  • ¼ tsp Salt
  • ¼ cup Butter
  • ¼ cup Sugar
  • 1 pc Egg
  • ½ tsp Vanilla Extract
Instructions

In a bowl, add all the dry ingredients and whisk them together.
In the stand mixer bowl, add the sugar and butter and using the paddle attachment, beat it well until the mixture is light in color and fluffy.
Scrap down the bowl, add the egg and vanilla extract and mix it until the egg is fully mixed in.
Add the dry ingredients and only mix it in until it is fully combined. Do not over mix.
Shape the dough into a rectangle, flatten it out a little and cover it with saran wrap. Keep it in the fridge for 30mins.
Dust the table top with flour. Unwrap the cookie dough and place it on the floured surface. Dust the top of the dough with a little flour too. With a rolling pin, roll out the dough until thin, less than 0.5 inch thickness.
Using a small ruffled cookie cutter, cut out the cookies and place them on a baking tray with parchment paper. Once all the cookies are placed on the tray, cut out small holes right in the middle of only half the cookies, those will be the top ones.
Pre heat the oven to 190°C/375°F and bake the cookies for 5-8mins. Once the cookies are done, take it out of the oven and allow it to cool down.
Put some jam in a piping bag and cut a small hole on the tip. When the cookies are fully cooled down, put the jam on the bottom cookies and place the top cookies (the ones with holes) on top. Finish it off by dusting some icing sugar on top.
Tips
  • The thinner you roll out the cookies, the faster they will cook in the oven so keep an eye on it. Once the edges start to turn a light golden brown, they're done
  • Use any jam of your choice, for this recipe I used my homemade Winter Jam, check out the recipe if you want them to have an extra warm feeling to it

    In the instructions, #6 says to "roll out dough until thin, about one inch thickness." Is this correct? Please clarify. Thank you.

      Terri, thank you for your question and for pointing that out. One inch is not correct, you want to roll it thin, less than 0.5 inch
