Found blueberries in my fridge after making those sausage and blueberry protein muffins recently, and for some reason decided to use them in cookies.

Not sure where that came from, but it really was a good decision!

Peanut buttery with the blueberry flavor was like eating a PB&J-ish cookie 🙂


Ingredients for PB Blueberries Protein Cookies Recipe

These peanut butter blueberry protein cookies need just a few healthy ingredients, no butter or oil and no sugar either! A great gluten free protein cookie cake too.

  • Oat Flour – You can make your own by blending rolled oats in a high speed blender
  • Vanilla Protein Powder for healthy, sugar free cookie
  • I used Quest Nutrition Vanilla whey-caesin since it works best for baking.
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein cookie. Quest Nutrition whey-caesin again here.
  • Peanut Butter Powder, also known as Powdered Peanut Butter.
  • I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit or PB2 too.
  • Peanut Butter
  • Unsweetened Applesauce for a soft cookie without butter
  • Non-fat Greek Yogurt contributes to the oil-free part of these protein cookies since it adds the moisture, and also extra protein
  • Almond Milk
  • Baking Powder

Ingredients

  • 3/4 cup Oat Flour, 68g, see post for subs
  • 1/2 cup Vanilla Protein Powder, Whey-casein, about 45g
  • 1/4 cup Unflavored Protein Powder, Whey-casein, 22g
  • 6 Tbsp Peanut Butter Powder, 36g
  • 1 tsp Baking Powder
  • 1/2 cup Unsweetened Applesauce, 120g
  • 1/2 cup Non-fat Plain Greek Yogurt, 112g
  • 1/4 cup Unsweetened Almond Milk, 60ml
  • 1 1/2 Tbsp Peanut Butter, 24g
  • 1/2 cup Blueberries, 70g
Instructions

Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all the dry ingredients in a bowl – oat flour, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.
Add applesauce, Greek yogurt, almond milk, peanut butter and mix.
Add blueberries and mix again.
Divide cookie mixture into 9 on baking sheet (keep 1-2” space).Spread with spoon or spatula and shape into cookies.
Bake about 9 minutes – top should be cooked and dry to touch, but still soft.
Transfer to cooling rack to cool completely.

    TEN INGREDIENTS, and the recipe only make NINE COOKIES? Hardly worth warming up the oven. NO PROBLEM, I almost always double/triple my recipes anyway and freeze them in plastic bags. Always have a LOT of cookies on hand.
