A fun Easter recipe to make with your friends and family...


A yummy no-bake treat

In a couple of minutes you can make these delicious Easter cookies that require no baking time at all.


Ingredients in easter cookies

Using ingredients one will easily find in their pantry, you will need:


Rolled oats and desiccated coconut or coconut flakes.


Maple syrup or honey as a sweetener.


Coconut oil, I haven't tried subbing this with anything else but I'm pretty sure any other oil will work in its place.


You will also need milk. I used soya milk to keep this vegan.


Finally, you will need cocoa powder and any mini Easter eggs you like!

Tools you will need to make this

You will need:

  • 1 mixing bowl
  • 1 tray lined with parchment paper
  • 1 mixing spoon

For measuring: 1/4 tsp, 1 tsp, 1/4 cup, 1/2 cup.

Ingredients

  • 2 cups rolled oats
  • 1/4 cup desiccated coconut + more to top the cookies
  • 1/4 cup maple syrup/honey
  • 1/4 cup melted coconut oil
  • 1/4 cup milk
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 16 mini Easter eggs
Instructions

In a mixing bowl, combine all the ingredients together and mix until combined.
The mixture is quite messy to work with so make sure to wet your hands before to handle them easier. Form the mixture into cookies - you should be able to yield 8.
Place each one on a baking tray lined with parchment paper.
Using your fingers, make a small dent in the middle of each cookie and place some coconut on top then add about 2 Easter eggs on top of each cookie.
Refrigerate for at least an hour or freeze for about 30 minutes before eating.
