No-Bake Easter Cookies

A fun Easter recipe to make with your friends and family...
In a couple of minutes you can make these delicious Easter cookies that require no baking time at all.
Using ingredients one will easily find in their pantry, you will need:
Rolled oats and desiccated coconut or coconut flakes.
Maple syrup or honey as a sweetener.
Coconut oil, I haven't tried subbing this with anything else but I'm pretty sure any other oil will work in its place.
You will also need milk. I used soya milk to keep this vegan.
Finally, you will need cocoa powder and any mini Easter eggs you like!
Tools you will need to make thisYou will need:
- 1 mixing bowl
- 1 tray lined with parchment paper
- 1 mixing spoon
For measuring: 1/4 tsp, 1 tsp, 1/4 cup, 1/2 cup.

Ingredients
- 2 cups rolled oats
- 1/4 cup desiccated coconut + more to top the cookies
- 1/4 cup maple syrup/honey
- 1/4 cup melted coconut oil
- 1/4 cup milk
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 16 mini Easter eggs
Instructions
- In a mixing bowl, combine all the ingredients together and mix until combined.
- The mixture is quite messy to work with so make sure to wet your hands before to handle them easier. Form the mixture into cookies - you should be able to yield 8.
- Place each one on a baking tray lined with parchment paper.
- Using your fingers, make a small dent in the middle of each cookie and place some coconut on top then add about 2 Easter eggs on top of each cookie.
- Refrigerate for at least an hour or freeze for about 30 minutes before eating.
