I wanted to elevate my standard oatmeal cookie recipe and give them a ‘make over.’ These Brown Butter Oatmeal Cookies are exactly what I was aiming for. The brown butter adds a delicious richness to the cookies and makes them full of flavour.

Ingredients

  • 3/4 Cup of All Purpose Flour
  • 3/4 Cup of Oats (I use quick oats)
  • 1 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Salt
  • 1 Teaspoons of Vanilla Extract
  • 1/4 Cup of Butter Milk
  • 6 Tablespoons of Brown Coconut Sugar
  • 1/2 Cup of Brown Butter (See notes below on how to brown your butter)
  • 1/2 Cup of Dark Chocolate Chips
Instructions

Preheat oven to 350 degrees F and grease or line a baking pan with parchment paper.
Combine all the dry ingredients in a medium sized bowl. Whisk until combined. Set aside.
In a separate mixing bowl, combine vanilla extract, butter milk, and brown butter. (See notes below on how to brown your butter)
Combine your butter mixture with your dry mixture.
Next, fold in your chocolate chips.
Chill your dough in the fridge for 30 minutes.
Using 2 tablespoons of dough for each cookie, roll into a ball and flatten with flat surface.
Bake your cookies for 10-15 minutes or until the edges begin to brown a little. If you want a softer cookie, bake for 10 minutes. Note: The cookies will be soft when they first come out of the oven. They will firm up.
Tips
  • Notes: How to brown your butter: Cut your butter into pieces so it cooks evenly. Place the pieces of butter in a small sauce pan. Cook on medium heat, stirring constantly. Once melted, the butter will begin to foam and sizzle around the edges. Keep stirring. In about 5-8 mins the butter will turn golden brown. The foam will slightly subside and the milk solids on the bottom of the pan will toast. It will smell intensely buttery, nutty, and rich.
