French Lace Cookies

Who doesn't love a great cookie. If you are counting calories it can be hard to enjoy them. Counting calories is hard when it comes to dessert. But its possible with the French lace cookies. This is a light and crispy cookie unless you add ice cream. It''s super easy to make and it only takes 15 minutes to prepare and 5 minutes to bake.

Ingredients for French Lace Cookies











  • ½ cup light corn syrup
  • ½ cup shortening
  • ⅔ cup packed brown sugar
  • 1 cup all-purpose flour
  • 1 cup chopped pecans or almonds
  • 1 cup of oatmeal (optional) adds more thickness.
  1. In a medium saucepan, heat the corn syrup, shortening, and brown sugar over medium heat. Stir constantly until the mixture comes to a boil.
  2. In a small bowl toss together the flour, nuts and oatmeal stir into the saucepan mixture, and remove from the heat. (Oatmeal is an optional if you want a thicker cookie.)

Drop 2 teaspoon size on greased cookie sheet 3 inches apart from each other. Bake at 350 degrees for 5 minutes. Let cool for 5 minutes before eating.

Make sure you let the cookie cool for 5 minutes before taking off the cookie sheet, otherwise it can fall apart. Once the cookie hardens you can remove onto a plate.

These cookies can be perfect with your favorite tea.

Another great idea with these cookies is you can make an ice cream sandwich. Add a scoop of vanilla ice cream in-between two cookies.

    The recipe calls for pecans, but I'm also seeing almonds. Do you just sprinkle them on top before baking, or right after they come out of the oven? Also, could you use butter instead of shortening? My mother used to make a very similar cookie that she would roll into a little tube.
