Are you a fan of brownies AND cookies? Well, this recipe combines both and makes one soft, fudgy, chocolatey treat! Although these are easy to make and require little preparation and bake time, be sure to leave that 4 hours of fridge time as mentioned in the recipe. This step is crucial to help you roll out the cookie dough in the desired shape and to get the right consistency! These cookies are not super sweet, but if you are someone with a big sweet-tooth, make sure to completely coat them in the icing sugar as mentioned in the steps.

Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 2 tbsp vegetable oil
  • 1 egg (or 1 flax egg)
  • 1/2 tsp vanilla extract
  • 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp icing sugar
Instructions

Mix together cocoa, sugar and vegetable oil in a bowl. Beat in your egg or flax egg and then add in vanilla. In a separate bowl, sift together flour, baking powder and salt. Add this to the cocoa mixture. Cover the dough and chill in a fridge for at least 4 hours.
Preheat your oven to 350°F (or 175°C). Line a cookie sheet with parchment paper. Using a tablespoon, scoop some dough and roll into tiny balls. Coat the balls completely and evenly with icing sugar and place onto prepared cookie sheet leaving room in between them. Do NOT flatten the balls, they will flatten a little bit themselves.
Bake for 10 to 12 minutes. Remove cookies from the cookie sheet after a minute. The cookies will harden once cooled.
