If you like liquirice, this is the recipe for you.


I know, what a weird taste combination!

But I promise you, it works! I saw these in a patisserie in Italy, and because they were selling them at such a high price, instead of buying them I thought "I can make these!". The only trouble was with finding liquirice powder, but once I ordered it online it was a breeze to make them and I also got the kids involved.


They were a huge success!


It's also my personal preference to use oil instead of butter to make cookies, as it makes them crunchier I find. Plus I can serve them to my lactose-intolerant sister-in-law.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tsp baking powder
  • 2 cups flour
  • 1 1/4 cup cornstarch
  • 4 tsp liquirice powder
  • 1/2 cup chocolate chips
Instructions

Put the eggs, oil, baking powder and sugar in a bowl and whisk until you get a cream.
Add flour, cornstarch, chocolate chips and liquirice powdeer.
Knead with your hands on a floured surface until you get a really smooth ball.
Roll the dough into a think sheet with a rolling pin.
Cut out the shapes that you prefer.
Put on a tray lined with baking parchment and if you want an even stronger liquirice flavour, sprinkle more powder on top.
Cook at 356F for 8-12 minutes depending on how small you made them - so keep an eye on them. You want them to firm up but not become too hard or brown.
Let them cool and serve.
