I think almost the whole entire state of Minnesota had a snow day today, including me! Therefore, I stayed in my warm house all day and prepped for Christmas! I got all of my present wrapping done and I did a ton of baking. These hot cocoa cookies are one of my new favorites to make this time of year. They are just so cozy! Can cookies be cozy? Loaded with marshmallows, hot cocoa mix, and chocolate chips, they really are just like a mug of hot cocoa in cookie form. Especially when they are eaten warm, straight from the oven.

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 1/2 cup hot cocoa mix
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup chocolate chips
  • 1/2 cup mini marshmallows
Instructions

Preheat oven to 350° and grease a baking sheet or line with parchment paper.
In a large bowl, combine softened butter, sugar, brown sugar, hot cocoa mix, egg, and vanilla.
Then add in the flour, baking soda, and baking powder.
Stir until just mixed.
Fold in the chocolate chips and marshmallows.
Scoop onto cookie sheet and bake for 10-13 min.

    Sounds delicious. Could one use several tablespoons of cocoa and a bit more sugar instead of the hot cocoa mix? I never buy it as I just find it too sweet to drink.

      I replaced the hot cocoa mix entirely with baking cocoa and used plant-based butter (for my dairy-allergic grandson) and they were a big hit with everyone!
