Is there nothing better than plunging a Chocolate Chip Cookie into a glass of milk? Whether you’re 5 or 35, it’s one of life’s little pleasures. These days I’m a big fan of creamy, nutty oat milk - it’s a perfect pairing with these cookies. I’ve eased back on the quantity of sugar in my recipe - some Chocolate Chip Cookie recipes are loaded with sugar! But with the additional flavours of vanilla bean and desiccated coconut, this fully plant-based recipe still retains all that satisfying sweetness, just minus the calories.

Ingredients
- 2 cups plain flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2/3 cup dark chocolate chips
- 1/2 cup walnut/pecan pieces
- 1/2 cup desiccated coconut
- 1/2 cup dark soft brown sugar
- 3/4 teaspoon ground vanilla bean
- 1/2 teaspoon sea salt
- 3/4 cup coconut oil
Instructions
- Pre-heat the oven at 170° (I set mine on the top n’ bottom oven + fan force setting).
- Combine all the dry ingredients together in a large bowl.
- Melt the coconut oil (either in the microwave or on the stove top) and gently pour the melted coconut oil over the dry ingredients, along with the water.
- Time to roll up your sleeves and get your hands dirty! Gently knead the cookie dough to bring all the ingredients together in sweet harmony.

Tips
- If you’re finding it a bit fiddly to roll the mixture into balls, just simply wet your hands - you’ll find this helps to keep the mixture together.
- I keep my cookies completely plant-based by chopping up a block of extra dark vegan chocolate for my chips - but you can use any chocolate that takes your fancy.
