Chocolate and Toffee Cookies Made With Brown Sugar & Butter
My husband Eric is on a sweets kick right now, which is really weird since he is not normally a person who enjoys desserts at all, but after he ate all the leftover Christmas candy at our house he asked me to make cookies. Sure, I love baking and am completely up for that.
After I found this recipe he looked at it and said “I don’t think I will like those… I don’t like toffee very much.” “Oh” was my answer but all the while I was thinking “Hah! These sound amazing and I am making these.” So I did, and guys… these are amazing cookies. Even Mr. “I don’t like ANYTHING!” admitted they were really good cookies. He liked them so much, in fact, I didn’t think I was going to have any left to take pictures of. I guess I don’t have to worry about these getting stale.
Toffee Cookie Ingredients
2 C. Flour
- Preheat your oven to 350°
- Mix together flour, baking soda, salt, and cornstarch in a medium bowl.
- Beat softened butter in a KitchenAid stand mixer and brown sugar until light and fluffy.
- Add egg and vanilla.
- Add flour mixture to butter a 1/2 C. at a time until thoroughly combined.
- Add the toffee bits and mini chocolate chips and mix until well combined.
- Using a cookie scoop or a teaspoon place balls of dough on a cookie sheet covered with silicone baking sheets or parchment paper.
- Bake for 10-12 minutes or until edges just start to turn golden brown. Cookies will still be soft in the middle but will be done.
- Remove from the oven and let cool on the cookie sheet for a few minutes before transferring them onto a cooling rack.
- Store in an airtight container.

- 14 Tbsp. butter, softened
- 1 egg
- 2 tsp. vanilla extract (homemade vanilla extract recipe)
- 1 C. toffee bits
- 1 C. mini chocolate chips
