S’mores Cookie Bars

Nothing says summertime like hot and gooey s’mores. Made with graham cracker dough, marshmallow creme, and chocolate chips, these s’mores cookie bars are the perfect treat to pair with your favorite grilling recipes and summer side dishes. They’re so good. I promise that you won’t be able to eat just one!

Ingredients


Just a handful of pantry staples are all you need to mix up these s’mores cookie bars.

S’mores Cookie Bar Ingredients


  • 1/2 cup unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 3/4 cup crushed graham cracker crumbs (about 4 crackers)
  • 1/2 cup marshmallow creme
  • 1/2 cup milk chocolate chips


Can I Use Homemade Marshmallow Creme To Make My S’mores Cookie Bars?


The short answer is yes, however, I honestly find it simpler to use store-bought. But, if you’re feeling ambitious and you want to channel your inner Martha Stewart, I recommend trying this recipe from Sally’s Baking Addiction.


Instructions


S’mores Cookie Bar Instructions


To begin, preheat the oven to 350℉ and line an 8×8 baking dish with parchment paper. Cream together the softened butter and sugar. Then, mix in the egg and vanilla.

Next, add the baking soda, salt, and flour to the dough. Set the bowl aside and prepare the graham crackers.

To prepare the graham cracker crumbs, place four crackers into a small plastic bag. Then, using a rolling pin, lightly crush the crackers into crumbs. Add the crumbs to the rest of the dough mixture and stir until just combined.

Gently press 3/4 of the dough into the bottom of the prepared baking dish. *Tip, lightly dip your fingers in flour to help prevent them from sticking to the dough.

Then, spread 1/2 cup of marshmallow creme on top of the bottom layer of dough. (I found that warming the marshmallow creme in the microwave for 7-10 seconds made it easier to spread.)

Sprinkle 1/2 cup of milk chocolate chips on top of the s’mores cookie bars. Finish by gently pressing the remaining dough on top of the marshmallow creme and chocolate chips. *Note, some of the marshmallow creme and chocolate chips will be visible.

Place the baking dish in the oven, and bake for 20-25 minutes, or until the cookie bars are golden brown. Let them cool completely before serving.

How To Store S’mores Cookie Bars


If you can avoid devouring the whole pan of bars in one sitting, then kudos. The force is strong with you. (Side note, my husband would be so proud of my Star Wars reference, but I digress…)

To store your cookie bars, place them in an airtight container on the counter. Properly stored, they will remain fresh for about 5-7 days at room temperature.

To freeze the cookie bars, place them in an airtight container, and place wax paper between each layer. The cookie bars can be frozen for up to 6 months. (Just be sure to defrost them for several minutes at room temperature when you’re ready to eat them.)

Instructions

Preheat oven to 350℉ and line 8×8 baking dish with parchment paper.
Cream together butter and sugar. Then gently beat in egg and vanilla.
Mix in baking soda , salt, flour, and crushed graham crackers until dough forms.
Press 3/4 of the dough into the baking dish. Then, gently spread the marshmallow creme over the top and sprinkle with chocolate chips.
Gently press the remaining dough on top of the bar mixture. There should be some marshmallow creme and chocolate chips visible.
Bake for 20-25 minutes or until golden grown.
Let cool completely before cutting and serving.
