I love making pie recipes in the fall. There’s just something about the cooler weather that screams for recipes like pumpkin hand pies and other indulgent desserts.

If you don’t like baking this is the perfect type of pie recipe for you to try. The air fryer makes quick work of the process and the pies are more like pop tarts!

What are hand pies?

Hand pies are pies that are wrapped up into little hand held pockets. Think of a pop tart crossed with a pie! These pumpkin hand pies are a portable little pumpkin pie pocket that you can eat on the go.

Hand pies can also be filled with savory fillings like meat mixtures, and veggies. There are so many possibilities that you can explore when creating your own hand pie recipes.

Can I use any type of air fryer for these pies?

You can! You can use the oven style air fryers or regular air fryers. This recipe could be easily adapted to work in the regular oven as well.

If you don’t have an air fryer you can try baking these according to the instructions on the pie crusts. Keep an eye on them and pull them out when they’re browned and slightly flaky on top!

Ingredients needed for pumpkin hand pies:

This recipe will use ready made pie crusts, the rolled up ones are easy and quick. You’ll also need some canned pumpkin pie filling, eggs, condensed milk, icing, and a round cookie cutter or press/sealer.

There’s nothing complicated in this recipe and most of these ingredients can be kept on hand for quite awhile.

Kitchen essentials for tasty hand pie recipes:

When you head into the kitchen to make some of these great recipes you’ll want to have the best tools on hand.

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are a must when doing cake mix recipes which can settle and become thin at lot easier than traditional cookie dough.

Of course mixing bowls, a mixer, spatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!

This recipe uses an air fryer, if you don’t have one they’re definitely a versatile tool that can be very helpful in the kitchen.

How to make the easiest pumpkin pies:

This really is the simplest way to make individual pumpkin pies. They’re perfect for holidays and parties but they are also great to just serve on a busy weeknight when you want a special treat.

Check out the step by step instructions for making these pumpkin hand pies. You’ll love the end result and these are easy enough that even kids can help create them!

Roll out the pie crust and use a round press to cut out circles.

In a mixing bowl, mix pumpkin, 2 eggs & condensed milk.

Take a half a spoonful of pumpkin filling and place it in the middle of half of your circles.

Place the remaining circles on top of the pumpkin topped circles and use the press to mend together.

Egg wash each pumpkin pie.

Place in the air fryer for 12-15 minutes at 350 degrees.

Remove from the air fryer and transfer to a cooling rack.

Cover in icing.

Serve & enjoy.

Is that sweetened condensed milk, or evaporated milk?

I wondered too about the milk but figured the author knew. They should change it so people can get it right the first time..

I think the 3 eggs in the recipe means that 2 for filling and 1 for egg wash for pie before baking.
