Blackberry Slab Pie

My favorite part of a pie or pastry is typically the crust, so I couldn't think of a better dessert to make than one that is mostly a flavored crust. This is similar to pie in that you have crust on the bottom and top, and there is filling in it, but more closely resembles a toaster pastry... which I also love. While I used blackberry preserves in this recipe, you could use just about any other preserve or jam, or even a pie filling if you want it a bit fuller. I think next month I will make a version of this with a thin layer of pumpkin pie filling. YUM.

I wanted to keep it as simple as possible with the ingredients so it was a quick as possibly to throw together, yet appears as though a but more was put into it ; ) And since my sister an I were making it together, we decided to pop a bottle of Trader Joe's Blanc de Blancs and throw a couple blackberries in the glass for fun.

If you are feeling more ambitious, you could make the preserves very easily on your own. I will share the recipe soon. Otherwise, you can just open the jar and go from there.

Directions:To start, you'll want to preheat your over to 350 F. Then, lay out the bottom piece of your pie crust on your pizza stone (or baking pan).

Spread the preserves around to cover the crust, leaving about half an inch uncovered around the perimeter.

Make your egg wash. Simply mix 1 egg yolk with 2 teaspoons of water.

Lay your second piece of crust over top of the preserve covered bottom. Pinch the edges all around, carefully rolling up slightly to ensure you seal in the preserves while baking. Brush with the egg wash.

Bake for about 40 minutes until golden.

Let cool before adding your glaze. To make the glaze, whisk or stir the confectioner’s sugar and water, one tablespoon at a time, until you get a glaze consistency. Brush liberally over the top of the cooled pie. Let it dry before slicing (only takes a few minutes.

Serve and enjoy!

Tips

  • Be mindful of the fact that different oven vary in their cooking times, so I would set a lower timer and keep on eye on the crust to make sure it doesn't burn. You can pull it out of the oven when it has a slight golden color to it, or wait until it is a bit darker, making for a harder, crunchier crust.
