This cheese log is full of delicious sweet and tangy flavour and perfect for serving at holiday celebrations. I actually made this recipe for thanksgiving but it's honestly suited for the entire season, hence why it would also make the perfect appetizer for christmas dinner. Everyone absolutely loved it! I am also a big fan of making fancy looking foods that are actually pretty easy to make which is especially important for most of us running on a busy schedule. This cheese log pairs nicely with crackers and wine! If you make this over the holidays you will definitely impress your guests with the way it looks and tastes.

Ingredients
For the coating
  • 1 cup of dried cranberries
  • 1 cup of pistachios
For the Cheese Filling
  • 300g of goat cheese (log)
  • 227g of softened cream cheese
  • 1/2 cup of cranberry and pistachio mixture from coating
  • 2-4 tbsp of honey
  • 1/4 tsp of ground ginger
  • 1/4 tsp of ground cinnamon
  • 1/4 tsp of dried rosemary
  • 1/4 tsp of dried thyme
Instructions
For the coating
Add the dried cranberries and pistachios to a food processor and pulse until you see both ingredients are crushed.
For the Cheese Filling
In a bowl, combine the goat cheese and cream cheese.
Add the spices and herbs to the cheese (thyme, rosemary, cinnamon, and ginger).
Add portion of cranberry and pistachio coating and mix everything together until it looks even.
To Form and Coat
Once the cheese filling is complete, place the mixture on to a plastic wrap and use the plastic wrap to roll it to reach the desired shape and look of your cheese log.
Freeze the cheese log for 10-15 minutes with the plastic wrap still on. Once that is done you can coat the cheese log with the cranberry and pistachio mixture.
Tips
  • Drizzle honey on top for added sweetness!
