Blueberry Lemon Zest Scone
If you love flavor of scones as much as I do, then you will love the tasty flavor of blueberry lemon zest scones. Its the added lemon that give these scones their unique taste.
Ingredients:
- 1/2 teaspoon of salt
- 8 tablespoons cold butter, cut into pats
- 1 large egg
- 1/2 cup of milk
- 2 tablespoon of lemon zest
- 2 Cups (self rising flour)
- One cup of blueberries
Step 1:
Stir together flour, salt and butter until everything is crumbly. If its to moist add a little more flour to make it less moist.
Step 2:
In bowl stir eggs, milk and blueberries and lemon zest. If needed drizzle more milk to make dough hold together.
Step 3:
Shaping the dough:
Create a round mound of dough and cut in half, then cut the half in four and place on greased sheet or if you have a scone pie dish you can use that.
Bake for 14 to 16 minutes at 400 degrees until golden. Remove from oven 5 minutes and glaze.
Drizzle the glaze on the scone. Make sure you drizzle evenly. See recipe for scone glaze below

- 4 to 5 tablespoon of cream
- 2 tablespoon of lemon zest
Instructions
Scone Glaze
- All you have to do is combine the cream, lemon zest and sugar to form the glaze. Drizzle over the scone.

OK not everyone has King Arthur Flour - nor do they want it, so is this a self rising flour recipe? That little piece of information would be very helpful to most. Any Self rising flour will work fine.
