Take breakfast and make it wintery and warming with this spiced plum pancake recipe! This would also work nicely with apples, pears or other stoned fruits. Pancakes are my favourite brunch treat for birthdays, hosting friends or just when you need a pick of a pick me up day!

  • Feel free to add chopped nuts, such as pecans or walnuts, to the pancake batter for extra texture.
  • Adjust the level of sweetness in the spiced plums according to your preference by adding more or less brown sugar.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
For the Spiced Plums
  • 4-5 ripe plums, pitted and sliced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
Instructions

Prepare the Spiced Plums:
In a medium bowl, combine sliced plums, brown sugar, ground cinnamon, ground nutmeg, and lemon juice. Toss gently to coat the plums in the spices. Set aside to let the flavors meld while you make the pancakes.
2. Make the Cinnamon Pancakes:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt.
In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few lumps are okay.
Let the batter rest for a few minutes while you heat a griddle or non-stick skillet over medium heat.
3. Cook the Pancakes:
Grease the griddle or skillet with a little butter or cooking spray.
Pour 1/4 cup of batter for each pancake onto the hot griddle.
Cook until bubbles form on the surface of the pancake, then flip and cook the other side until golden brown.
Repeat until all the batter is used.
4. Finish the Spiced Plums:
While cooking the pancakes, heat a skillet over medium heat.
Add the spiced plums and cook for 5-7 minutes, or until the plums are softened and the juices have thickened slightly.
Remove from heat.
5. Serve:
Stack the cinnamon pancakes on serving plates.
Spoon the warm spiced plums over the pancakes.
Drizzle with maple syrup and, if desired, top with a dollop of whipped cream or yoghurt
6. Enjoy:
Serve immediately, savoring the delightful combination of fluffy cinnamon pancakes and the sweet, spiced plums.
