Ingredients for Mini Pumpkin Ricotta Muffins
Simple ingredients for healthy muffins...

Libby's Pumpkin Puree - You can use a different brand if you can't find Libby's brand or make your own pumpkin puree by roasting a small baking pumpkin in the oven at 400 degrees for 40 minutes then just scoop out the meat and blend in a food processor.


Part Skim Ricotta Cheese - I like the Calabro brand as it has no hydrogenated fats, high-fructose corn syrup or added MSG.


Whole Wheat Pastry Flour - Make sure you use pastry flour and not regular flour as pastry flour is a softer flour that substitutes for all-purpose in this pumpkin ricotta muffin recipe where tenderness is the goal.


Pumpkin Pie Spice - This spice has a warm complex sweetness with a delicate blend of cinnamon, ginger, nutmeg and allspice bringing a homemade flavor to sweet recipes, like muffins, spice cakes, cookies, streusel toppings and of course, pumpkin pie.


Green Apple Shredded - I used a Granny Smith for this recipe and shredded it with a small hand box grater. You can also use a Honeycrisp apple or Golden Delicious.


How to make WW One Point Mini Muffins


1: Preheat your oven to 400 degrees F - Coat a 24 cup mini muffin pan with cooking spray.

Spray your muffin pan with olive oil...

2: In a medium bowl whisk together the pumpkin puree, ricotta cheese, maple syrup, canola oil, vanilla extract and egg. Once mixed add in the shredded apple.

Whisk into a nice golden batter...

3: In a separate bowl mix your pastry flour, baking powder, pumpkin pie spice and salt. Now combine both bowls and mix together.

Combine all ingredients and mix well..

4: Divide batter and fill muffin cups to the top.

Fill your muffin cups to the top with your batter...

5: Bake 14-16 minutes until golden...enjoy!!!

  • ¼ cup of Pumpkin Puree
  • ½ cup of Part Skim Ricotta Cheese
  • 3 Tablespoons of Maple Syrup
  • 2 Tablespoons of Canola Oil

  • 1 Egg
  • 1 Green Apple shredded
  • 1 cup of Whole Wheat Pastry Flour
