Mini Chocolate Chip Protein Muffins
My kids LOVE Little Bites muffins. While I do not mind if they have them occasionally, I don't love the idea of them eating a product with "sugar" as the main ingredient daily for breakfast. That is why I decided to find a healthier alternative.
These mini chocolate chip protein muffins are not only delicious and easy to make, but are a healthier alternative to store bought muffins. They are made with Kodiak pancake mix, which is higher in protein and lower in sugar than traditional pancake mix.
The addition of Greek yogurt also increases the protein content, which will keep your kids more satisfied throughout the morning, and help prevent blood sugar spikes.
The little muffins are so moist, fluffy and sweet, nobody will ever know they are "healthy". The best part is they can be kept in the freezer for up to 3 months. Simply pop a couple out, microwave for 30 seconds and they are ready to go.

Mini Chocolate Chip Protein Muffins

Ingredients
- 2 cups Kodiak pancake mix
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/3 cup plain Greek yogurt
- 2/3 cup skim milk
- 1 egg
- 2 Tbsp pure maple syrup
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees
- Spray a mini muffin tin with nonstick cooking spray
- In a large bowl, whisk together the pancake mix, baking powder and cinnamon
- Add the milk, egg, Greek yogurt, vanilla, and maple syrup. Mix until just combined (do not over mix, the batter will have some clumps).
- Fold in the chocolate chips.
- Spoon batter into the 24 mini muffin tins
- Top with additional chocolate chips if desired
- Bake for 8-10 minutes
Tips
- Store in an air tight container for up to 5 days.
- Freeze in a large ziplock bag for up to 3 months.
