I am so so happy that it is finally pumpkin season! Although summer is my favorite season and I love every second of it, there is just something about the first few weeks of fall. The weather cools down, the leaves start to change, and the fall baking cannot be beat! Give me everything pumpkin and apple. You are going to love these cinnamon sugar pumpkin muffins. They are fluffy, moist, and have the perfect amount of pumpkin and sweetness. They are good as a muffin alone, but the cinnamon sugar topping is what puts them above and beyond! You need to make these this fall.

Ingredients
For the muffins:
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract 
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 can of pumpkin purée (15 oz)
  • 1 3/4 cup flour 
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of ginger & cloves
For the topping:
  • 2 Tbsp melted butter
  • 2 tsp cinnamon
  • 1/2 cup sugar 
Instructions
For the muffins:
Preheat oven to 350°.
In a large bowl, combine butter, eggs, vanilla, sugar, and pumpkin.
Then add in the flour, baking soda, cinnamon, nutmeg, ginger and cloves until just mixed.
Pour into muffin tin (greased or lined with cupcake liners).
Bake for 20-25 minutes or until toothpick comes out clean.
Let muffins cool.
For the topping:
In a small bowl, melt butter.
In another bowl, mix together cinnamon & sugar.
Dip muffin tops in butter then cinnamon sugar!
