Back with yet another pumpkin recipe because ‘tis the season! How can I not?! You are going to love these cinnamon sugar pumpkin blondies. They are truly perfect. These blondies are sweet, moist and fluffy on the inside with a slight cinnamon crunch on the outside, and just a hint of pumpkin! Plus that brown butter flavor is just *chefs kiss*. They remind me of a type of coffee cake! Does that mean they can be eaten in the morning for breakfast? Asking for a friend. You can’t go wrong baking these blondies this fall (or all year round for that matter).

  • 1 stick of butter, browned
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • 1 egg
  • 1/3 cup pumpkin purée
  • 1 1/2 cups flour
  • 1/2 tsp baking soda 
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of ginger
  • Pinch of cloves
  • 1 Tbsp cinnamon sugar 

Melt butter over medium low heat and stir frequently until brown.
Refrigerate until room temperature.
Once the butter is cooled down, preheat oven to 350° and grease an 8x8 cake pan.
In a bowl, combine brown butter, sugars, vanilla, egg, and pumpkin.
Add in flour, baking soda, cinnamon, nutmeg, ginger, and cloves and stir until just combined.
Place in cake pan and top with cinnamon sugar.
Bake for 25-30 minutes until toothpick comes out clean and the top is crusty and golden brown!
