Back with yet another pumpkin recipe because ‘tis the season! How can I not?! You are going to love these cinnamon sugar pumpkin blondies. They are truly perfect. These blondies are sweet, moist and fluffy on the inside with a slight cinnamon crunch on the outside, and just a hint of pumpkin! Plus that brown butter flavor is just *chefs kiss*. They remind me of a type of coffee cake! Does that mean they can be eaten in the morning for breakfast? Asking for a friend. You can’t go wrong baking these blondies this fall (or all year round for that matter).
Cinnamon Sugar Pumpkin Blondies

Ingredients
- 1 stick of butter, browned
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp vanilla
- 1 egg
- 1/3 cup pumpkin purée
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of ginger
- Pinch of cloves
- 1 Tbsp cinnamon sugar
Instructions
- Melt butter over medium low heat and stir frequently until brown.
- Refrigerate until room temperature.
- Once the butter is cooled down, preheat oven to 350° and grease an 8x8 cake pan.
- In a bowl, combine brown butter, sugars, vanilla, egg, and pumpkin.
- Add in flour, baking soda, cinnamon, nutmeg, ginger, and cloves and stir until just combined.
- Place in cake pan and top with cinnamon sugar.
- Bake for 25-30 minutes until toothpick comes out clean and the top is crusty and golden brown!
