Quick and Easy Chocolate Cupcakes

This is a super recipe if you're looking for something easy to make with the kids that doesn't require a lot of precision and skill, or if you need a bunch of sweet treats at short notice, such as for a tea party or charity bake sale. By starting with a hot chocolate paste for the base, using hot cocoa and water, I find that the cakes retain some moistness once baked.

Delicious, light and moist chocolate cupcakes smothered in Nutella. Perfect for both kids and adults to enjoy!

First, a rich chocolatey paste is made from hot cocoa to form the base of the mixture.

Then for a super quick, easy next step, all of the remaining ingredients are thrown together in one big bowl to make the cake batter.

Everything is whisked well to combine and already looks delicious! Just try to get the mixture into the oven and don't start eating just yet! Ok.....you could like the spoon!

The cake mixture is divided evenly between cupcake cases. Not always as easy as it looks as you can see from my attempt!

The cupcakes are baked until they have risen and are spongy to touch, before being smothered in Nutella.

Ingredients

  • 4 tbsps boiling water
  • 40g cocoa powder
  • 3 large eggs
  • 175g unsalted butter (room temperature)
  • 165g caster sugar
  • 115g self raising flour
  • 1 tsp baking powder
  • 6 tbsps Nutella or other chocolate spread
Instructions

Preheat your oven to 200 degrees Celsius.
Line a cupcake baking tray with 12 paper cupcake cases.
Sift the cocoa powder into a mixing bowl and pour in the boiling water, then stir well until it forms a thick chocolatey paste.
Add the remaining ingredients, except the Nutella and mix well with an electric whisk or by hand.
Divide the mixture evenly between the 12 cupcake cases.
Bake in the centre of your oven for 12-15 minutes until the cupcakes have risen. They should spring back if you tough the tops lightly.
Leave to cool for about 10 minutes on a wire rack.
Carefully spoon half a tbsp of Nutella on top of each cupcake, spreading it with the back of the spoon until it evenly covers the top.
