Brown Sugar Cupcakes From Scratch With "Survivor or Beach Theme"
My friend is a big Survivor fan (as am I) we decided to throw a themed birthday party with some themed cupcakes from scratch!
Start with 1/2 cup of brown sugar.
Then add 1 cup flour and 1 teaspoon cinnoman.
Mix in 1/2 teaspoon of baking powder, 1/2 teaspoon salt, and 1/4 cup vegetable oil.
Add two eggs and whisk with 1 teaspoon vanilla extract.
Pour into lined cupcake pan and pour in batter. Bake at 350 degrees for 20 minutes until toothpick is clean.
Once cupcakes are cool, time to decorate! I used store brought icing for this part because it was a little too much to make the icing from scratch.
Then I crushed some graham crackers in a plastic bag for the "sand".
Then I dipped each cupcake into the graham crackers.
Then I mixed a little blue food coloring with the rest of the icing but I didn't mix it well since I wanted the color to vary.
Then I bagged it to put the "waves" on.
Finally, I got some graham bears, chocolate covered blueberries (for the coconuts) and edible leaves.
This little guy is sun bathing.
This one is about to get eaten by a shark!

Ingredients
For the cupcakes
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon ground cinnamon
- 1/4 vegetable oil
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
For the Decorations
- icing
- blue food coloring
- icing bag
- graham crackers and bears
- chocolate covered blueberries
- edible leaves and shark fins
Instructions
For the cupcakes
- mix all ingredients and whisk
- pour into a lined cupcake pan
- bake for 20 minutes at 350 degrees until toothpick comes out clean
For the Decorations
- crush the graham crackers and decorate as you see fit . I like to change each on up!
