This recipe is for Tzatziki chicken pita wraps. They are incredibly easy to make and are the perfect quick lunch or dinner. The recipe has very few ingredients, so it is no issue to whip up this meal in no time, making it cost and time efficient. This recipe is really refreshing with the tzatziki and tastes so incredibly good that you might not even want to share your leftovers! The recipe can also easily be made into a salad by swapping the pita bread for some romaine lettuce and adding in a bit more kale. You can also feel free to add any other veggies that you would like.

Ingredients

  • 6 cloves of garlic (minced)
  • 4 tablespoons of olive oil
  • salt and pepper to taste
  • 1/2 tablespoon of lemon garlic seasoning
  • 1/2 tablespoon of oregano
  • 4 russet potatoes (can be peeled or not peeled - but make sure they are washed thoroughly)
  • 1 cup of kale
  • 2 cups of plain Greek yogurt
  • 1/3 cup of grated cucumber
  • 6 whole wheat pita breads
  • 3 chicken breasts
  • 1 teaspoon of paprika
Instructions

Preheat your oven to 500 degrees Farhrenheit
Cut your russet potatoes into thick fries
Place the cut up potatoes on a baking sheet with parchment paper on the sheet.
Coat the potatoes in 2 tablespoons of olive oil, 2 cloves of minced garlic, salt, pepper, 1/4 tablespoon of oregano, and 1/4 tablespoon of lemon garlic seasoning
Broil the potatoes in the oven until they look crispy and cooked, the length of time this takes depends on how thick your potatoes were cut, but for me it usually takes 30-50 minutes
While the potatoes are cooking, in a pan, pour in 2 tablespoons of olive oil, and on medium high heat cook your chicken breasts. Season the chicken breasts with 2 cloves of minced garlic, 1 teaspoon of paprika, salt, pepper, 1/4 tablespoon of oregano, and 1/4 tablespoon of lemon garlic seasoning prior to cooking on the pan.
Once the chicken has cooked, take it off the heat and put it to the side.
In a bowl, mix together, your Greek yogurt, 2 cloves of minced garlic, salt, pepper, and the cucumber. Place this to the side.
Now, once the chicken, potatoes, and tzatziki are ready, you can start assembling your wraps. Take the pita bread and put the tzatziki you made on one half of the bread, then on the other half put your potatoes, and chicken. Top the pita with some fresh kale and enjoy!
