A family favorite for a healthy and delicious week night meal on the table FAST! You can add your own twist to this one and try regular potatoes or different types of fish like Salmon! I LOVE the cool yet spicy crema sauce combined with all of the flavors of the taco. Adding sweet potatoes as the side really balances everything too. You get sweet from the potatoes. heat in the cream and fish, crunch from the slaw, tang from the lime. It truly is a delightful meal! Enjoy friends! Ingredients

  • 1 pound tilapia filets
  • 1 packet taco seasoning
  • olive oil
  • purple cabbage slaw mix
  • 1 avocado pitted and sliced
  • crumbled cotija cheese
  • pre-made pico de gallo
  • fresh cilantro chopped
  • 2 limes
  • 4 corn tortillas (I like to microwave them or heat them in a skillet before serving)
Spicy Crema Sauce
  • 1/2 cup mayo or sour cream
  • 1 Tablespoon water
  • 2 teaspoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 whole canned chipotle pepper in adobe sauce
Pan Roasted Sweet Potatoes
  • 1 medium sized sweet potatoes
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • 3 teaspoons olive oil
  • cinnamon is an option
Instructions
The Tacos
In a skillet over medium-high heat, heat 1 tablespoon of olive oil.
Sprinkle taco seasoning on both sides of all of your tilapia filets.
Sear the fish in the heated olive oil in the skillet until cooked through and crisp on the edges. Set Aside.
Make the crema sauce by blending all of the ingredients in a blender until smooth.
Build your tacos. Set the corn tortillas on your plate. Smear cream sauce on the bottom. Place seared fish on top. Top with all of your toppings; slaw, avocado slices, cotija cheese, pico, cilantro, lime juice. ENJOY (:
Sweet Potatoes
Peel and dice sweet potatoes into bit size pieces
Heat a skillet over medium heat and add the olive oil.
When the oil is hot, add the potatoes. Stir to coat all of the pieces with olive oil and add the salt and parsley. Cinnamon is optional.
Cook the potatoes, stirring occasionally, for about 15 minutes. Get them nice and crispy remember if you cut them smaller they will cook faster!
Turn off heat when the potatoes are soft with a crispy edge.
