When it's Tuesday and you are a taco fan, then what's better than a beautifully prepared steak taco dinner? The beauty of it is that there is no general rule as to how to make a great taco. You really only need tortillas, meat / protein of choice, and whatever veggies and sauce you like!

I liked to keep it simple with this one, a corn tortilla, a juicy steak, my homemade chimichurri and my homemade pickled onions (using homemade ingredients always feels more rewarding to me!), and lastly a generous amount of grated parmesan just to twist things up!

Note: The key is to smother one side of the tortillas in the steak juices for enhanced flavors!

Ingredients

  •  - 2 pieces of steak (~120g each / as much as you like it to be meaty!)
  • - Oil, salt and pepper, garlic to cook the steak
  • - Tortillas of choice (I chose corn)
  • - A few tbsp of #chimichurri
  • - Pickled or raw onions
  • - Grated parmesan (because why not)
  • - Like wedges, for decor purposes (you don’t need it on steak)
Instructions

- Cook the steak on high heat in a skillet for 1.5-2 min on each side (feel free to get fancy with a thicker cut and reverse sear, but we're keeping it simple here). Once cooked, let it rest for a few minutes.
- In the same skillet, heat the tortillas and smother them in steak jus until soft ish
- Assemble: Tortilla / Steak / Chimichurri / Onions -- Finish up with a generous amount of parmesan
- Get ready to make a second batch too :D
