Apple Pie Spring Rolls

Spring rolls and apple pie...what do these have in common? Well, nothing really, unless you're looking at this recipe!


The filling to shell ratio makes this dessert so indulgent, and it's a fun way to use spring roll sheets if you've got some extra lying around after having made some savoury spring rolls.

The crispy rice sheets seal the filling in well, and also means they can be easily picked up and eaten like a burrito.


If you don't want to fry them, spray or brush oil onto all sides of the apple spring rolls, coating them completely, before baking them in an oven or an air fryer.

Ingredients

  • 4 medium or 400 grams apples, sliced and diced.
  • ½ cup or 100 grams brown sugar
  • 3 tbsp butter
  • ½ tsp ground cinnamon
  • 1 tsp lemon juice
  • ½ tsp vanilla extract
  • Corn slurry (mixture on 1 tbsp corn starch and 1 tsbp cold water)
  • 6 sheets of spring roll wrappers
  • 1 cup oil for frying
  • ¼ cup of caramel sauce for topping
Instructions

In a non-stick pan, add the butter, brown sugar, and apple. Cook for about 8 minutes on a low heat, stirring constantly.
Add the ground cinnamon, lemon juice and vanilla extract, stir and add the corn slurry, cook for another 3 minutes until thickened.
Set aside to cool down before assembling.
Place the apple mix in the center of the wrapper then roll up the bottom, then the two sides, and lastly the top.
Fry in hot oil until golden brown. Let it cool down for 5 minutes, drizzle with caramel sauce before serving.

    Is that a spring roll wrapper? Or an egg roll wrapper?

    I thought spring roll wrappers you had to soak in water and didn’t cook them ?

      There are rice paper spring roll wrappers (which you use raw, after soaking to soften them) and there are wheat flour based which are for deep frying. Just buy the appropriate type for your required food item. Thai and Japanese usually use rice paper wrappers. Americanised Chinese use the deep fry type.
