French toast was my absolute go to brunch food for a while – it became the routine and weekend treat in my house and I loved to experiment with different flavours. This indulgent and delicious recipe combines the rich flavors of caramelized pears and crunchy pecans with creamy Greek yogurt. It's a perfect dish for a special weekend brunch or a delightful treat any time you want to indulge in something sweet and comforting. It's a perfect balance of sweetness, creaminess, and crunch in every bite. It’s also such a great way to use up any left over or slightly stale bread you have – obviously it doesn’t jut have to be sourdough. Bon appétit!

Ingredients
For the French Toast
  • 4 slices of sourdough bread (day-old or slightly stale works best)
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Butter or cooking spray for frying
For the Caramelized Pears
  • 2 ripe but firm pears (such as Bosc or Anjou), peeled, cored, and sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
To Serve
  • 1/2 cup pecans, toasted and roughly chopped
  • Greek yogurt
  • Maple syrup or honey (optional)
Instructions
Prepare the Caramelized Pears and Pecans
In a skillet, melt the unsalted butter over medium heat. Add the sliced pears, brown sugar, ground cinnamon, and a pinch of salt.
Cook the pears, stirring occasionally, until they are tender and caramelized, about 5-7 minutes. Remove from the heat and set aside.
In a separate dry skillet, toast the pecans over medium-low heat for a few minutes until they become fragrant. Be careful not to burn them. Roughly chop the toasted pecans and set them aside.
Prepare the French Toast
In a shallow dish or pie plate, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until well combined.
Heat a large non-stick skillet or griddle over medium heat. Add a little butter or use cooking spray to coat the surface.
Dip each slice of sourdough bread into the egg mixture, ensuring both sides are coated.
Place the dipped bread slices onto the preheated skillet or griddle. Cook until golden brown and crispy on both sides, about 2-3 minutes per side.
Place the cooked sourdough French toast on serving plates.
Top each slice with a generous amount of caramelized pears and chopped pecans.
Add a dollop of creamy Greek yogurt on top of the pears and pecans.
