Barbeque Chicken Naan Flatbread With Mozzarella & Pickled Sweet Corn

Some days it is just really hard to come up with full-fledged dinner plans. Or, you just do not have the energy to cook or even mess with dirty pots and pans. You could do take-out, which always has it's time and place...But, maybe you are feeling you want something a smidge more healthy and where you can know all of the ingredients, too!


Incoming: This Barbeque Chicken Flatbread. I use naan bread as the base for this and you can buy these in the bread/grain section of your grocery store. Find a rotisserie chicken while you are there, and you are almost set for this dish.

But, regular sweet corn is just fine.


These are also super fun to make with kids as they can top and 'design' their flatbreads in the way they want to! Add more veggies and have yourself a pizza decorating party!

Ingredients
BBQ Chicken Flatbread
  • 4 naan breads
  • 1 rotisserie chicken, shredded
  • 4-5 Tbsp of your favorite BBQ sauce
  • 1 medium red online, sliced
  • 8-12 oz of shredded mozzarella (more to taste)
  • 2 ears of sweet corn, kernels removed (OR make pickled sweet corn recipe)
  • cilantro for topping after bake
  • ranch dressing for optional topping after bake
Instructions
BBQ Chicken Flatbread
Heat oven to 425 F
Remove chicken from rotisserie and toss in 2-3 Tbsp of BBQ sauce, set aside
Slice red onions, remove kernels from corn, dice cilantro
Pre bake the naan flatbread (can add a dash of EVOO if you would like) for about 3 minutes while the oven is preheating. Remove.
Top the flatbread with a the remaining BBQ sauce (sort of like a pizza sauce)
Top with shredded mozzarella, chicken, and red onion.
Bake in oven for about 7-10 minutes depending on your oven, you don't want the naan to over-bake.
Top the flatbreads with corn, cilantro, more BBQ and ranch dressing if you would like. Serve immediately!
Tips
  • You do not have to have the pickled sweet corn for this to be a solid meal. I highly recommend making it and keeping in your fridge...but this is certainly a solid dish with regular old sweet corn.
