Vegan Coquito! (Puerto Rican Eggnog) “Jersey Girl Knows Best”
Are you a coconut lover like me?! Yes! Well, have you ever heard of coquito?! It’s a Puerto Rican version of eggnog and it’s a coconut lovers dream 🥥 This year I made a vegan version and it pulled out all the stops! Ready?! Let’s do this!
Here are all my ingredients in a blender! Oh the whiff of coconut and cinnamon is the most magical combination! Baby, it’s cold outside, but this coquito is giving me tropical feels 🌴
I ended up making a double batch to take to parties and for testing out a drink or two myself! 😉 Ran out of bottles to store the coquito?! No problem…just rinse out any empty liquor bottles you have on hand!
Look how beautiful this coquito looks with its creamy off white color and flecks of cinnamon throughout! Yum!

Vegan Coquito! (Puerto Rican Eggnog) “Jersey Girl Knows Best”
Recipe details
Ingredients
- 2 cans cream of coconut (1 unsweetened)
- 3 cans coconut milk (1 unsweetened)
- 1 cup white Bacardi Rum
- 1/4 cup brandy
- 2 cinnamon sticks
- 1 tsp. Vanilla extract
- 1 tsp. Ground cinnamon
- 1/4 cup Cinnamon Water (1/2 cup Boiled water with 2 cinnamon sticks (let steep for 10 minutes, then strain)
- 2 32-oz glass containers
Instructions
- Blend all ingredients in a blender on high until completely incorporated. Funnel the mixture into 2 large stopper bottles or several mason jars. Add a cinnamon stick to each bottle. Refrigerate. The longer it refrigerates, more of the cinnamon flavor comes out. Shake really well and serve in a short glass filled with ice and garnish with a cinnamon stick or a dusting of cinnamon on top! Tips
- Let the bottle sit out for 15 minutes before shaking. Because the solids in the cream of coconut and coconut milk settle to the top, you may need to loosen them up with a butter knife or bamboo skewers.

Are the 2 cinnamon sticks to make the cinnamon water? Or is the cinnamon water made with different cinnamon sticks?
