When the temperatures rise, is there anything more refreshing than a mojito?

After all, these delicious cocktails originated in Cuba, and it gets pretty hot there!

When AnnMarie and I went on a cruise with our families a few years ago, keto mojitos were our drink of choice.

So when we began planning a menu for a Patriotic Cookout, I knew a variety of mojito would make a perfect cocktail!

A mojito with a twist…

Is there any fruit that’s more perfect for summer than watermelon?


Berries and peaches are pretty perfect too.

But watermelon?

It just screams summer!

So what if I combined watermelon and some kind of berry?

Which is how these Watermelon Blueberry Mojitos came to be!

Fresh Mint is the Key to a Mojito

As soon as we got back from our cruise, I decided to plant some mint in a container in our back yard.

The mint grew for a bit, and then it quickly died off because I’m not very good at remembering to water potted plants…

But the next year?

While the pot was barren and empty?

Suddenly I noticed a bunch of fresh mint growing all. around. the empty pot!

Since then?

Mint seems to be taking over the area below our window seat in the kitchen…

Honestly, mint seems to be one of the few plants I’ve managed to grow successfully!

All that to say, be careful if you decide to plant mint of your own.

It’s pretty hardy.

And a little bit invasive.

But it sure smells good!

And you’ll be able to make as many of these delicious watermelon mojitos as you want!

In fact, you’ll be able to make any old kind of mojito.

For an army…

Ingredients for a Watermelon Blueberry Mojito

One of my favorite parts of this recipe is all the fresh ingredients.

Just take a look at what you’ll use to make this delicious summer cocktail!

So many wonderful flavors!

How to Make a Watermelon Blueberry Mojito

You might think it all starts with watermelon.

After all, watermelon is the first word in the title!

But no, it all starts with making a blueberry simple syrup.

The recipe is easy to make, but it will take about 25-30 minutes.

During the summer, I like to keep a batch of blueberry simple syrup in my refrigerator at all times.

Because it’s perfect for making cocktails, salad dressings, and for topping French Toast and nonfat Greek yogurt.

You will need the liquid from one batch of this Blueberry Simple Syrup recipe with the blueberries strained out.

The syrup doesn’t need to be cooled before making the cocktail, so you can make the syrup while you’re preparing the rest of the cocktail

Next, make a watermelon puree.

Place approximately 8 cups of cubed watermelon in a food processor and puree for about 60 seconds on high until the melon is liquified.

I love my Ninja system that includes both a blender and a food processor attachment.

Do You Need to Strain the Watermelon Juice?

To strain, or not to strain.

That is the question!

Honestly, it depends on your personal preference.

If you like orange juice with the pulp, then go ahead and skip straining the watermelon juice.

But if you don’t like OJ with pulp, you probably won’t like the watermelon pulp either.

To strain the watermelon juice, simply pour the puree through a fine mesh strainer.

I like straining into a carafe like this one that has a lid because then it’s easy to make the ingredients for this mojito recipe in advance and store them in the refrigerator.

You can press the pulp with a spoon to release all the liquid.

Then discard the pulp.

Why Do You Need to Muddle the Mint?

Muddling ingredients helps to release their flavors by crushing them.

But always wait to muddle the mint until just before you prepare the cocktails.

Otherwise the mint leaves will turn brown.

We recommend using either a wooden muddling tool or one with a rubber end.

If you’re making individual drinks, you can muddle the mint and lime directly in the glass.

Be sure you’re using a sturdy glass!

These mason jar glasses with handles are great.

I like to muddle all the mint at once in a bowl.

It just makes it easier if I’m making a pitcher of mojitos.

To get even more flavor from the mint and the limes, try muddling some of the limes with the mint!

I’ve found this actually releases even more of the mint flavor.

Maybe it’s the liquid from the limes that improves how easy it is to muddle the mint?

How To Prepare a Garnish

Garnishes are optional, but they sure look pretty!

And they’re yummy to eat too.

Use a 6-inch skewer for the garnish.

Thread the skewers with fresh blueberries, wedges of lime, and chunks of watermelon.

I like to use small mint sprigs to garnish my watermelon mojitos too.

How to Assemble the Mojitos

In a pitcher, combine pureed watermelon, blueberry simple syrup, lime juice, rum, and one can of lime seltzer.

Add ice, muddled mint, and wedges of lime to a 16 ounce glass.

Pour the watermelon mixture over the ice.

Garnish with the skewers of fresh watermelon, lime wedges and blueberries.

Now sit back, and enjoy!

I like a thick pulpy drink!

But the batch below?

It’s made with strained watermelon juice and strained blueberry simple syrup.

They may look different but the flavors are surprisingly the same!

  • 8 cups cubed seedless watermelon chunks
  • 1 1/4 cups strained blueberry simple syrup
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 limes, cut into eighths
  • 48 medium-large fresh mint leaves
  • 12 oz. unsweetened lime-flavored seltzer
  • 1 1/4 cups light rum
  • Optional Garnish:
  • Cubed watermelon, fresh blueberries, additional lime wedges, and sprigs of fresh mint

Make one batch of this Blueberry Simple Syrup recipe.
Puree 8 cups of watermelon chunks in a food processor. If desired, strain the watermelon juice through a fine mesh strainer and discard the pulp. Yield, approximately 3-3.5 cups of watermelon juice depending on whether you strain the pulp.
In a large bowl, muddle the fresh mint leaves to release the oils from the leaves. The leaves will look a little wilted. Add 6 of the lime wedges and muddle them together with the mint leaves.
In a large pitcher, combine watermelon juice, blueberry simple syrup, lime juice, rum, and lime seltzer water.
Place ice, mint leaves, and muddled lime wedges in 6 glasses. Add one more un-muddled lime wedge per glass.
Pour watermelon mixture over the ice, mint, and lime wedges.
Optional: Garnish with skewers of fresh blueberries, cubed watermelon, and a lime wedge with a sprig of fresh mint.
