This sparkling strawberry rosé cocktail is light and refreshing, perfect for Mother's day or brunch! Made with a strawberry mint simple syrup, elderflower liqueur and sparkling rosé, they're like a fancier version of a mimosa ;).

Sparkling strawberry rosé is sweet, bubbly, light and refreshing.

The perfect brunch cocktail for Mother's day, Valentine's day or just because you need a darn good drink.

This sparkling strawberry rosé cocktail starts with a homemade strawberry simple syrup.

Mint and lemon are added to help cut the sweet and add another layer of delicious flavor.

Add the strawberry syrup to the bottom of your glass, then add elderflower liqueur and top with your favorite sparkling rosé.

The elderflower liqueur adds a floral fruity flavor that pairs perfect with the strawberry.

I found these beautiful edible rose petals to make these mimosas extra pretty.

Not only is this drink pretty, but its light and refreshing.

I've never been a fan of rosé. I always thought it was too sweet but I was wrong.

Someone gave me a glass of rosé with some ice and a lemon slice and it was heaven!

Not too sweet, the prettiest shade of pink and the lemon really brought out the beautiful flavors.

Sparkling rose is just like regular rose except with the bubbly.

So picture fancy pink mimosas ;).

Homemade Strawberry Simple Syrup Ingredients:

  • fresh or frozen strawberries
  • granulated sugar
  • water
  • pinch of salt
  • fresh mint leaves
  • lemon juice


You can use fresh or frozen strawberries for this simple syrup.

I like to taste the syrup after it simmers for 10 minutes to see if more sugar needs to be added.

Sometimes the strawberries are more tart which may require a little bit more sugar.

I love the taste of the mint in these cocktails but basil would work too.

The homemade strawberry simple syrup makes more than enough for a few cocktails.

You can store the leftovers in a jar and keep for topping ice cream or adding to lemonade!


Sparkling Strawberry Rosé Mimosa Ingredients:

  • homemade strawberry simple syrup
  • elderflower liqueur
  • sparkling rosé wine
  • fresh mint, lemon and edible rose petals for garnish (optional)


Sparling rosé can be found where the champagne is. Sometimes its called pink champagne.

You could also use regular champagne or prosecco for this recipe but I love the light fruity flavor of the rosé and the pretty pink color.

How to make Sparkling Strawberry Rosé Cocktails:

  1. Prepare the simple syrup: add strawberries, granulated sugar, water and salt to a medium sauce pan over medium-high heat. Once it comes to a boil, lower heat and simmer for 10-20 minutes, stirring occasionally, until the syrup has reduced and thickened (it should coat the back of the spoon).
  2. Remove from heat. Add fresh mint leaves and lemon juice. Cover pan with lid or plastic wrap and let infuse for 5 minutes off the heat. Remove cover. Place a strainer over airtight container or jar and strain the syrup into the jar using a spatula or spoon to help syrup pass through. Let it cool to room temp before covering and refrigerating.
  3. Make the sparkling rose cocktail: once simple syrup has cooled, place about 1-2 tablespoons in the bottom of a champagne flute. Add elderflower and top with sparkling rosé.
  4. Garnish with strawberry slice, edible rose petals and mint if desired.


What is Sparkling Rosé?

Sparkling rosé is rosé wine with added bubbles.

Fruity with hints of floral, it's the perfect spring or summer drink.

Sweet, but not too sweet.

You can find sparkling rosé in the same aisle as Champagne and Prosecco.

Tips for Sparkling Rosé Cocktails:

  • Only pop the sparkling rosé when you're ready to serve! It will start to loose it's fizz shortly after opening.
  • Chill the simple syrup and rosé before making your cocktails. These are delicious cold, you don't want the rosé room temperature.
  • To really wow your guests (or yourself!) garnish with these edible rose petals, a strawberry slice and some fresh mint.
  • Store the leftover strawberry simple syrup in a mason jar or airtight container. Use it for other cocktails, in lemonade or as a delicious ice cream topping!

Strawberry Simple Syrup:
  • 1 cup fresh or frozen strawberries (leaves removed)
  • ¾ cup granulated sugar
  • ½ cup water
  • pinch of salt
  • ½ cup fresh mint leaves
  • 1 tablespoon lemon juice

  • 1-2 tablespoons strawberry simple syrup, chilled
  • 1 ounce elderflower liqueur
  • 3 ounces sparkling rosé wine, chilled
  • fresh mint, for garnish
  • strawberry slices, for garnish
  • edible rose petals, for garnish
Instructions
