It’s a spooky month and I made these incredible two-toned mimosas for Halloween. These gradient-colored mimosas are bubbly, not too sweet, and very boozy without tasting like it! It’s such a fun drink and you can switch it up with different liqueurs to see what different pairs of colors you can make! Halloween is all about thinking out of the box so this sooky blue cocktail definitely fits the bill.


What makes this cocktail spooky is three key things:


  1. The grenadine which creates the bloody two-toned look of this cockail. Get creative and add candy-based bones, skulls to your champagne flutes.
  2. Not stirring it gives it the illusion of two worlds in one.
  3. Using champagne versus other wines because the champange creates waves because of all the efferversence.

Ingredients

  • 4 oz (1/2 cup) blue curaçao
  • 4 oz rum
  • 4 oz lemon juice
  • 4 oz grenadine syrup
  • 2 cups Cava/Brut/Prosecco champagne
  • 1 cup ice cubes
Instructions

Shake lemon juice, rum, blue curaçao with ice cubes in a cocktail shaker or mason jar.
Strain the shaken cocktail halfway in 4 champagne flutes.
Top with champagne and add two tablespoons of grenadine syrup to each flute. The cocktail will look blue and red. Do not stir!
Just serve cold.
