Summer is around the corner and all I can think is lots of outdoor fun with family and friends. Picnic, grilling or BBQ's are on the works to enjoy beautiful summer days. And what about the side dishes? my favorite are potato salads, corn on the cob, coleslaw, green salads and more.


One of my favorite side dishes to go with grilled meats is a good potato salad. There are many recipes out there, so I got inspired and made this delicious potatoes with yogurt, mayonnaise, dill, red onions and celery for a nice crunch and finally small pieces of hard boiled egg. In a large bowl, I combined same amounts of greek yogurt and mayonnaise, with one teaspoon of organic ground dijon mustard, added a splash of lemon juice, salt and pepper, just the perfect dressing for this delicious potato salad.

Ultimate Dill Potato Salad

Ingredients
Potato Salad
  • 3 lbs of small organic red potatoes
  • 2 stalk of celery diced
  • 1/2 cup of diced onions
  • 2 hard boiled eggs
  • 1/4 cup of fresh dill - chopped
  • Salt and pepper to taste
  • Dressing:
  • 1/4 cup of greek yogurt
  • 1/4 cup of mayonnaise
  • 1 tsp of coarse ground dijon mustard
  • 1 TBSP of lemon juice
  • 1/4 cup of fresh dill - chopped
  • Salt and pepper tro taste
Instructions

Clean, semi peel and cook the potatoes in water for about 20 minutes or until tender. Salt the water to taste. Drain and refrigerate
In a bowl, I combined same amounts of greek yogurt and mayonnaise, with one teaspoon of organic ground dijon mustard, added a splash of lemon juice, salt and pepper, just the perfect dressing for this delicious potato salad.
In a large bowl, combine the potatoes with the dressings, diced onions and celery and chopped dill. Combine all ingredients gently and fold in the pieces of hard boil eggs.
Refrigerate for 1-2 hours before servings to allow all the flavors to be soaked by the potatoes.
