How to make a dandelion jelly recipe. Dandelion jelly tastes like honey and sunshine. You can can this jelly recipe or freeze it for delicious dandelion jelly all winter.

You'll need several cups of fresh dandelions. You can pick them from your yard, but make sure they haven't been sprayed or where a dog or other animal are near them. Also avoid dandelions near the road.

First you'll make a dandelion tea. Then you'll use that to make delicious dandelion jelly.

This does have a lot of sugar in it because pectin needs sugar to set up. For a low sugar option, use Sure Gel Low Sugar. Just adapt your recipe to the directions in the box.

Ingredients


  • 4 cups dandelion petals
  • 4 cups boiling water
  • 2 tablespoons lemon juice
  • 1 box pectin (1/3 cup)
  • 4 cup sugar

Instructions


Place 4 cups of fresh dandelion petals in a large bowl. Cover with 4 cups of boiling water. Let sit overnight to make tea and then strain out the petals. Squeeze the petals to get more of the dandelion water out of them. Discard or compost the petals.
In a medium sized saucepan, add the dandelion tea and lemon juice. You should have about 3 1/2 cups of dandelion tea. Then sprinkle the pectin over the liquid and stir. Bring it to a boil while stirring frequently.
Add 4 cups of sugar and boil for 2 minutes. Stir constantly.
Ladle the dandelion jelly recipe into prepared jars leaving 1/4 inch headspace. Run a knife around the edge to remove air bubbles and wipe off the rim. Process in a hot water bath for 10 minutes (or adjusted for your altitude).
