Chevy's Cottage Cheese Pancakes
I have seven sister in laws. You can imagine how many grand children there are in the family (and that's just the girls!). When the family gets together it is a rambunctious function to say the least. And there is always food, and good food! When my husband's sisters make a dessert board, they really do it right. This breakfast recipe is from Chevy, a mom with four boys, who looks as good as it gets. How does she do it? Probably in part with easy recipes like these (and some great genes, and ASOS!). Her boys are obsessed with these pancakes; I can't remember a time I was over and these weren't frying up golden in the pan. They are a bit healthier than the regular pancake with the cottage cheese addition, and they are golden and a little crisp, with soft centre. Thanks for these, Chev!
Chevy's Cottage Cheese Pancakes
Recipe details
Ingredients
- 500 grams cottage cheese
- 2/3 cup flour
- 1/4 cup sugar
- 2 eggs
- butter for frying
- chocolate chips -optional
Instructions
- Combine all ingredients in a mixing bowl.
- Heat a frying pan over medium heat- add a dollop of butter.
- Once butter is melted, spoon about 1/4 cup of batter into pan, making little rounds (sprinkle on chocolate chips now if desired).
- Cook until bubbles appear on the top of the first side. Flip and cook another minute. Enjoy!

No baking powder?
I've been making a version of these pancakes for years, however, I add wheat germ and oatmeal. It's my family's favorite pancake recipe.
