Egg & Potato Breakfast Bowls

Ingredients
- 1 Potato
- 1 tbsp Herbs/seasoning (I used Green Goddess by Trader Joes)
- Drizzle of olive oil
- 1 tsp butter
- 2 eggs
- 1 tsp paprika
- 1 tsp garlic powder
- Sprinkle of pepper
- Sprinkle of chilli flakes
- Handful of chopped spinach
- 1/4 red onion diced
- 1/4 tomato diced
- 1 tsp minced jalapeño (optional)
- 1 tbsp shredded cheese
- 1 tsp drizzle of hot sauce
Instructions
- Wash the potato and chop it into cubes.
- Drizzle with olive oil and herbs/seasoning of choice.
- Air fry for about 10 minutes at 400°F.
- In a pan, melt butter over medium heat and cook eggs (sunny-side up).
- Sprinkle paprika, garlic powder, pepper, and chili flakes onto the eggs.
- Once the eggs are cooked, turn off the heat and place them on a separate plate.
- Quickly heat up the spinach until it wilts.
- Form your bowl by layering the potatoes, cheese, veggies, spices, and sauces.
- Top off with the eggs.
