Watermelon and Arugula Salad With Raspberry Vinaigrette
Summer is the perfect time for this refreshing salad. The sweet crunch of watermelon paired with peppery arugula and the tart bite of raspberry is the perfect combo. I like to cook seasonally, and use what is available at the local store or farmers market.
This is also the perfect salad for picky eaters since you basically assemble it on the individual plates. Have someone who doesn't like pistachios? No problem. Just leave them off that plate. No need to pick things out of a salad you don't like. Maybe even substitute another nut in its place.
The dressing is also versatile. Maybe use it on another green salad, or drizzle it over some fruit for a different kind of dessert. My dad, who never eats sweets, loves fresh berries for dessert and this dressing gives the bowl a little something extra!

Watermelon and Arugula Salad With Raspberry Vinaigrette

Ingredients
Watermelon and Arugula Salad
- 4 cups of arugula
- 2 cups bite-sized watermelon pieces
- 1-2 medium yellow tomatoes
- 1/2 cup pistachios
- 1/4 cup diced red onion
Raspberry Vinaigrette
- 1/2 cup raspberries
- 1/2 cup olive oil
- 1/4 cup white balsamic vinegar
- 1/2 - 1 teaspoon minced garlic
Instructions
Watermelon and Arugula Salad
- Wash and dry arugula and divide it evenly on four plates.
- Divide the watermelon, tomatoes, pistachios and red onion evenly among the four plates on top of the arugula. No need to toss!
Raspberry Vinaigrette
- Place all ingredients in a small blender or processor and blend till smooth and creamy.
- Drizzle dressing on the salads when serving
Tips
- If you can’t find yellow tomatoes, red ones will do
- If you don’t have white balsamic vinegar, you can use white wine vinegar
