Honey Balsamic Zucchini

As summer comes to an end, so does squash and zucchini season. By the end of the season, I have grown tired of the same old roasted or stewed squash and zucchini recipes.


This past week, I jazzed up zucchini by sautéing zucchini, onions, and cherry tomatoes in a honey, balsamic sauce. The outcome was delicious and just what I was looking for.

Topping the recipe with goat cheese provides an extra punch of tangy flavor.

This recipe is the perfect way to utilize summer vegetables that are about to go bad.

The honey balsamic sauce provides a sweet and savory flavor the whole family will love.

It is the perfect side dish for chicken, steak or fish.

Ingredients

  • 1 medium yellow onion, sliced
  • 2 medium zucchini, diced
  • 1 cup cherry tomatoes, sliced in half
  • 1 tsp minced garlic
  • 1/4 cup white balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Crumbled goat cheese (optional)
Instructions

1. Heat olive oil in a large skillet over medium high heat
2. Add onions and sauté until tender (about 2-3 minutes)
3. Add zucchini, garlic and tomatoes and sauté until zucchini is softened and tomatoes are about to pop (about 5 minutes)
4. Season with salt and pepper.
5. Turn heat down to low and add balsamic and honey.
6. Cook for an additional 5 minutes.
7. Sprinkle with goat cheese if desired, and serve!
